Pecans On Fire

If you are looking for a crowd pleaser, look no further than this unique snack or salad topping, which includes a true southern staple, pecans. We pair our recipe with southern bred, Schermer Pecans, but any will work!

Pecans on Fire

Yield: 1 Pound

1 1/2 Teaspoon Salt

2 1/4 Teaspoon Sweet Paprika

1 Teaspoon Cayenne Pepper

1 1/2 Teaspoon Black Pepper

1 Pound Extra Large Pecan Halves

1 Cup Confectioners Sugar

Directions

  1.  Beat until frothy- 1 Teaspoon Water, 1 Egg White
  2.  Coat nuts with mixture. Place on baking sheet at 250F for 60 minutes

Diving Into 2017

We dove right into the new year by catering more than 1,200 guests at the annual Snyder Grand Ball. Partygoers celebrated 2017 with dancing, a full bar and eats on every level of the aquarium from Hamby Catering. The evening also featured music by the David Higgins Band & DJ NattyHeavy. In the midst of it all, guests even stopped for an occasional fish sighting.

Our menu included easy to eat foods in kraft boats including our Lowcountry Jambalaya, BBQ Chicken Thighs, Buttermilk Fried Chicken and Hand Pressed Waffles and Braised Short Ribs with Mashed Potatoes. Downstairs in the tank room, guests snacked on our Signature Farm Stand Display.

As the champagne was poured for a midnight toast, attendees enjoyed interacting with our S’mores Trail Mix Display, featuring Golden Grahams, Mini Marshmallows, Butterscotch Chips, White Chocolate Chips and Chocolate Chips. Total yum!

It was a wonderful way for some of our staff to ring in the new year by catering one of Charleston’s most celebrated events. We look forward to a successful 2017!

2017 Catering Trends

With a new year, comes new culinary trends that shake up the food and beverage scene. These are crafted by popular ingredients, emerging flavors or geographical locations. Hamby is embracing a few of these progressions with open arms, including the purple food craze. Read below for what experts believe will be the hot dishes in 2017…

Purple Food Items 

‘Tis the year of purple power. Cauliflower, potatoes, carrots and cabbage in vibrant shades ranging from plum to violet are one of the year’s mot anticipated food trends. Our Cauliflower Timbale boasts a deep orchid shade and is equal parts tasty as it is beautiful.

Street-Food Inspired Dishes 

We’re taking it to the streets – well, street inspired dishes that is. Grab your tacos, kabobs (really anything on a stick!), flatbreads and more. We love that these dishes are becoming more mainstream as heavy hors d’oeuvre options. Our Caprese Skewer and brand-new Korean Pork Tacos are the perfect addition to your next event!

 

Heirloom Fruit & Vegetables 

Known for being hand selected by gardeners, heirloom fruits and veggies are showing up on menus everywhere. Despite their sometimes odd looks and quirky ways, heirlooms bring lots to the table (literally!) Often times heirloom produce is more flavorful and varied in color. Our Farm Boards feature Heirloom Tomatoes in a variety of pigments and look gorgeous among our Pickled Vegetables, Deviled Eggs and Pecan Raisin Crisps.

Hyper-local sourcing

We love local. In fact, we source most of our produce through Limehouse Produce and similar to years past – consumers are craving the freshest, most sustainable produce, meats and cheeses for their special events. We’ll continue to gather most of our harvest via local purveyors, ensuring the highest quality to our customers.
