Hamby Happenings: Lipton Be More Tea Festival

On October 24, the long-awaited Lipton Be More Tea Festival rocked the Lowcountry with performances from alternative rock giants, Denitia and Scene, Outasight, BØRNS,  St. LuciaWalk The Moon, The Roots and Passion Pit, and Hamby Catering was called in to provide food and drinks for the festival’s crew and VIPs. Lipton celebrated their 125th anniversary at North Charleston’s River Front Park to honor the brand’s past and embrace the future of tea. Even the The Huffington Post is raving that the event turned Charleston into a party town.

Hamby Catering was honored to cater the event – we’re not going to lie, we also enjoyed the tunes. The Hamby crew served up our Watermelon & Mozzarella Cubes, Hamby Housemade Fruit and Nut Crisp, Pickled Shrimp and White Truffle and Sea Salt Popcorn, among other inventive snacks. Our snacks for Saturday night had a particular focus on being infused with Lipton Tea products making them quite the conversation starter. All in all, over a three-day period, we successfully served over 1,000 meals!

Real Hamby Weddings: Megan & AJ

Megan & AJ, a recent Hamby couple, said, “I do” on a beautiful September day at Magnolia Planation. With Smith photos + ink on hand to capture all the sweet moments, their day was complete perfection. The pair traveled from NYC to celebrate their love in Megan’s hometown of Charleston. Donning red lips and a feather hair fastener, Megan was one stylish bride! It was a true pleasure to be involved in their day.

Oh, and we can’t forget to mention the couple served chicken and waffles as a late night snack – the perfect dancing treat!



The couple let their love of wizardry influence their reception decor.


Notice anyone familiar? Hint: The lady on the far left thinks 98 degrees is the perfect temperature!

Hearty & Warm: Flavors of Fall

As the leaves begin to change and the temperature drops, our minds drift to hot apple cider, pumpkin flavored everything and hearty entrée options that warm the soul. It’s fall y’all, and we wanted to share a few tips to make your fall menu memorable.

For starters, we encourage clients to highlight ingredients from the harvest. Produce like corn, pumpkin and potatoes are fall staples, but at Hamby we like to combine these basic ingredients with unexpected flavors that excite the palate. Our warm Corn Bisque with Crisp Prosciutto is one example of a unique pairing, as well as our Rilette of Duck Confit atop Cabernet-poached apple with leek frizzles (shown below).

Alongside seasonable vegetables, these surprising hors d’oeuvres invite people to approach basic ingredients with a new fall flair!


Moving on to entrées, it’s all about the main attraction. You can’t go wrong with classics like a perfectly seasoned beef tenderloin or rosemary roasted chicken. But for couples that want to explore the less expected, Hamby offers our Lamb en Chemise with Goat Cheese, Pine Nuts, Baby Malabar Spinach and Rosemary Jus.

And, of course, you can’t forget the sides! We pair this dish with Sweet Glazed Carrots and Herb Roasted Mini Potatoes to complete the fall flavor profile (pictured below). Yum!


Another option is our Lowcountry Chicken Saltimbocca, pan-fried with Shaved Country Ham and served with Seasonal Fall Vegetables (pictured below).


To round out the menu, we never forget dessert! Our Homemade Fruit Pies are a fan favorite for dinner parties or holiday meals. While our Apple Tarte Tatin with Cinnamon Crème Angalise or Tispy Bread Pudding (shown below) are also perfect options for the grand finale of an autumn wedding or corporate event menu.

Hamby Happenings: The Gaillard Center

This fall, the Gaillard Center reopened its doors to the community to provide a gathering space that will entertain guests, energize projects and make new ideas possible. The ballroom, banquet and exhibition spaces are now open for an array of events, including weddings, galas, conventions and tradeshows. Hamby Catering & Events is thrilled to announce our partnership with the Gaillard, as an approved venue caterer.

The renovated space is a balance of local and international, traditional and modern, designed to serve the needs of our contemporary city. The decor is reflective of European opera houses with lavish touches. However, it is also easily divisible and adaptable to the needs of the occasion, whether it be a wedding or business convention.

We look forward to working alongside couples and companies who choose the Gaillard Center for an event space. Chef Brunski and our creative kitchen staff are in the process of finalizing our Gaillard menu options that will reflect both our Lowcountry tradition and the grandeur of the space.

Touchdown Hamby: Elevated Tailgating

As we finish another gorgeous summer here in Charleston, we can’t help but start to get excited about tailgate season! Yes, it’s almost time for our favorite rivalries to resurrect, beer to brew and our weekends to be filled with family and football. Whether you sport Clemson orange or Carolina garnet (or maybe another alma mater all together!), one thing we can all agree on is proper food and drink is a MUST during the big game.

With game-day food as a top priority, we’re eager to share our inside tips for elevated tailgating.

1. Stick to the classics

Sure everyone can throw some chips into a bowl, but when that gets stale, try our famous Black Pepper, Sea Salt and Parmesan Hand-Cut Chips for a captivating crunch!

Craving a slice of cheesy pizza? Our Mini Tomato Pies can conquer your craving, but they are small enough to eat in a bite or two. Make sure to order extra, these go quick!

2. Fresh is festive

Make sure to balance those cheat-worthy foods with some fresh produce. Not only do ripe fruits and veggies provide the nutrients you need, but the color is as pleasing to the tailgate display. You can read more on colorful cuisine here.

3. You don’t need to be the ‘grill guy’

With Hamby Catering & Events, you can enjoy a juicy burger during halftime, without having to miss any of the game’s action by standing outside at the grill. Our Mini Slider Station is a fan favorite. Served with lettuce, tomato, sharp cheddar and chipotle aioli, these “three bite burgers” are sure to please a (hungry) crowd! Our Sweet & Sour Meatballs are another great item to include at your football kickoff party.


We’re also excited to announce that this fall we’ll be offering new Tailgating Packages to elevate your party snacks and simplify the stress of planning.

Some party options include:

  • Sideline Sandwich Sampler – assortment of pimento, egg salad, chicken salad and shrimp salad tea sandwiches, served with our famous hand-cut chips ($32)
  • Field Goal Feast – a display of fresh fruit and vegetables, cheese, pecans and egg salad ($43)
  • Blitz Backyard BBQ – slow roasted pulled pork, an array of tangy mustards, homestyle mac n’ cheese, Carolina slaw and soft rolls ($65)

All tailgating packages serve approximately 6 guests.

With the above tips and new tailgate menu from Hamby Catering, you and your friends will enjoy the game no matter what the score. Well….maybe not ALL of you.
