One of our favorite options for the season is the delicious Bosc Pear. Bosc pears have a more firm, dense flesh than other pear varieties, so they are ideal for use in baking, broiling or poaching. They retain their shape and texture better than other varieties, and their flavor is less likely to be overwhelmed by the use of strong spices like cinnamon, clove or nutmeg.
At Hamby, we love to lightly poach our Bosc pears in a chardonnay with a sprinkle of cinnamon and sugar. These go beautifully on top of our Hamby Signature salad; a blend of baby spinach, Boston Bibb & Frisee lettuces, blue cheese crumbles, candied pecans, and Olde Colony Bakery cream bread croutons. We like to dress it all with a light champagne vinaigrette, but a sweet sorghum vinaigrette would be another tasty way to finish this salad. If we’re being honest, these “pear” well with just about anything!
