Hamby’s How-To: Throw a Pumpkin Carving Bash

We’re firm believers in the phrase “Effortless Entertaining”. Just because you’re the host of a party doesn’t mean you can’t join in the fun too! Here at Hamby Catering & Events we want to make your life easier, so get out of the kitchen and into the party with our easy steps for throwing a hassle free Pumpkin Carving Bash this October.

Step 1: Decorating for Dummies!

Why worry about spoiling those heirloom linens when newspaper will do just as well. Set up your tables and cover them with old newspapers or brown Kraft paper for a casual feel with guaranteed easy cleanup. No ironing necessary! Make sure to put out buckets or tins for people to empty the contents of their pumpkins into. To decorate your space, hollow out a few pumpkins, plop a colorful pot of mums in, and call it a day! Don’t forget to save those pumpkin seeds for snacking during your soiree.

Step 2: Simple Supplies

B.Y.O.P. is the name of the game. Have guests bring their own pumpkins, and all you have to do is pick up some cheap spoons and knives for them to use when carving. We recommend hitting the local thrift shop to pick up enough carving supplies for your guests at minimal expense to you. Toss the knives, spoons and a couple of sharpies for designing their masterpieces in some mason jars on your tables and your guests will be ready to go.

Step 3: Rethink Refreshments

No need to stress about tending a full bar for your pumpkin party. Mix up a seasonal drink and set it out for guests to help themselves. We’re big fans of this Honeycrisp Apple Sangria and a few cold bottles of seasonal pumpkin beer for the adults. Kid friendly crowd? Make an Autumn Punch like this one and substitute ginger ale for the wine. Let your kids help by sticking goggly eyes onto plastic cups for a fun and clean-up free project.

Mad About Mushrooms

Here at Hambyland we’re going rogue. September may have been National Mushroom Month, but we’re determined to keep on celebrating into October! Aside from visiting the apple orchard and picking pumpkins, Fall welcomes comforting mushroom recipes to our recipe repertoire. Mushrooms add a hearty texture and umami to Fall favorites like chili or stuffed acorn squash, as well as to help transition summer foods into the chillier season. They are extremely versatile and can be worked into many recipes for a new and interesting twist on your traditional favorites. We love adding finely chopped mushrooms into burgers and meatloaf, which both adds nutrients and pumps up the flavor of a simple weeknight meal. It’s Fall, Y’all!

Here at Hamby Catering & Events we are counting down the minutes until Fall is officially here. We’re dreaming of cool nights for walks around the Battery, cozy sweaters, and colorful leaves underfoot. Pumpkins are starting to pop up all over town, and while it may be too early to break out your carving tools, we’re getting inspired to break out the pumpkins in our kitchen instead.

Mrs. Hamby’s Pumpkin Apple Streusel Muffins

Muffins

2 ½ cups all-purpose flour
2 cups sugar
1 T pumpkin pie spice
1 t baking soda
½ t salt
2 eggs, lightly beaten
1 cup canned pumpkin
½ cup vegetable oil
2 cups peeled, finely chopped apples

Streusel Topping

2 T all-purpose flour
¼ c sugar
½ t ground cinnamon
4 t butter

Muffins

In large bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt. In separate bowl, combine eggs, pumpkin and oil. Add to dry ingredients. Stir until mixture is just moistened. Fold in apples. Spoon batter into greased muffin cups, filling ¾ full. Sprinkle Streusel Topping over batter. Bake at 350 degrees for 30 min.

Streusel Topping

Combine flour, sugar, and cinnamon. Cut in butter with a fork or pastry blender until crumbly.

Makes 18 muffins.

Enjoy with a steaming mug of cider on your front porch!
