Pickled Peaches

One of our more popular passed hors d’oeuvres for weddings and corporate events is our Sea Salt & Black Pepper Seared Tenderloin of Beef Crostini with Housemade Herbed Boursin & Pickled Peach. This unique blend of bold and sweet flavors pairs perfectly together and is as equally beautiful on display. Besides the Boursin Cheese, the Pickled Peach is a uniting element for the flavor of this dish. We asked Chef Patrick to share the recipe to the Pickled Peach so you too, could make it at home.

 

Ingredients

4 Cup Sugar

1 Cup White Vinegar

1 Cup Water

4 Lbs. Peach Slices, Canned

4 Each Cinnamon Sticks

16 Each Whole Cloves

Directions 

  1. Combine sugar, vinegar and water in a pot

2. Bring to boil and simmer for five minutes

3. Place one cinnamon stick and four cloves into the bottom of a quart canning jar

4. Place peaches in jar

5. Pour liquid over top to fill cans

6. Allow to cool to room temperature

7. Cover and refrigerate for storing

Yield – 256 Crostinis

Here at Hamby Catering & Events we are counting down the minutes until Fall is officially here. We’re dreaming of cool nights for walks around the Battery, cozy sweaters, and colorful leaves underfoot. Pumpkins are starting to pop up all over town, and while it may be too early to break out your carving tools, we’re getting inspired to break out the pumpkins in our kitchen instead.

Mrs. Hamby’s Pumpkin Apple Streusel Muffins

Muffins

2 ½ cups all-purpose flour
2 cups sugar
1 T pumpkin pie spice
1 t baking soda
½ t salt
2 eggs, lightly beaten
1 cup canned pumpkin
½ cup vegetable oil
2 cups peeled, finely chopped apples

Streusel Topping

2 T all-purpose flour
¼ c sugar
½ t ground cinnamon
4 t butter

Muffins

In large bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt. In separate bowl, combine eggs, pumpkin and oil. Add to dry ingredients. Stir until mixture is just moistened. Fold in apples. Spoon batter into greased muffin cups, filling ¾ full. Sprinkle Streusel Topping over batter. Bake at 350 degrees for 30 min.

Streusel Topping

Combine flour, sugar, and cinnamon. Cut in butter with a fork or pastry blender until crumbly.

Makes 18 muffins.

Enjoy with a steaming mug of cider on your front porch!
