Real Hamby Weddings: Amy & Brandon

We’re well into the month of May, meaning wedding season is in FULL swing in the Lowcountry. Recently we’ve had some jam packed weekends servicing weddings and corporate events all over the peninsula and surrounding coastal areas.

This week, we got our hands on images from the talented, Catherine Ann Photography. We loved reliving Amy & Brandon’s destination wedding at The Island House. The photos below give you a feel for their casual and laid-back family style menu – a perfect vibe for any vacation wedding.

The cocktail hour included items such as our Pecan Crusted Chicken Bites and Caprese Skewers.

Our Salad Station featured our Hamby Signature Salad boasting flavorful strawberries, blue cheese, Ole Colony Bakery croutons and champagne vinaigrette.

Our Speciality Station featured Shrimp & Grits, a Carving Station, Mac n Cheese Bites, and Zucchini, Squash and Tomato Skewers.

Our Southern Butcher Block Display served Bourbon Smoked Turkey, Carolina Pit Ham, Asher Blue Cheese and Split Creek Farm Goat Cheese. We also had mason jars with Pickled Carrots, Beets, Okra, Green Beans and Pearl Onions. Alongside these were Sweet Potato Biscuits and Pimento Cheese Biscuits. Some sweet Southern comfort food – indeed!

Hamby Happenings: South Carolina Aquarium Gala

Last week, Hamby was on-site to dive into the 15th Annual South Carolina Aquarium Gala. For the third year in a row, we provided catering for the gala’s 340 guests. Attendees were treated to a beautiful sit down dinner, keynote speech from special guest Jeff Corwin of the Animal Planet and an exclusive look at the new Shark Shallows exhibit during the gala’s official after-party.

The theme of the evening was the shark, and Chef Bruski paid homage to the royal mammal by incorporating hues of purple throughout the menu.

Guests enjoyed cocktails and a seated dinner on Liberty Square with a vibrant menu featuring aquatic flavors. Our passed hors d’oeuvres included: Sweet Potato and Golden Beet Latkes, Sirloin and Rice Stuffed Peppers and a Petite Lobster Roll with Chervil (in acknowledgement to Corwin’s birthplace of Nowell, Massachusetts).

Other appetizers included our Purple & Golden Cauliflower Timbale, Avocado Microgreens and a Batonnet of Fresh Radish with Olive Oil (featured in the photo below).

The main course showcased bolder, more exotic flavors. We served Swordfish en Chemise a la Nicoise (featured in the photos below). It was served with an Eggplant Caponata, Phyllo and Chèvre Feta with Olive Tapenade Oil. Accompanying the swordfish was Golden Baby Heirloom Tomatoes, Purple and Golden New Potatoes and Sauce Lebneh.

After the sit down dinner, guests mingled inside the aquarium for an awesome after-party with  dancing, adult milkshakes and tater-tots…yes, tater-tots! Our gourmet ‘tot’ bar was a HUGE hit among party-goers!

It was a lovely evening dining beside the sea and raising money to protect our oceans. We’re looking forward to future endeavors with the SC Aquarium!

Deviled Eggs

Deviled eggs are a staple for any Southern party and Mrs. Hamby agrees. This quick bite is perfect for potlucks, tailgates, and summer dinners. Follow these directions to whip up this classic favorite. 24 servings. 

Ingredients:

1 dozen hard-cooked eggs
1 teaspoon seasoning salt or to taste
1 teaspoon Worcestershire sauce
1 teaspoon prepared horseradish
2 teaspoons sweet pickle juice
2 teaspoons prepared mustard
1/2 cup mayonnaise or more, if needed
1/2 teaspoon pepper
Sliced pimiento-stuffed olives or dill for garnish

Directions: 

Slice hard-cooked eggs in half, lengthwise. Remove yolks and grate in food
processor. Add seasoning salt, Worcestershire sauce, horseradish, pickle juice,
mustard, mayonnaise and pepper. Blend well. Adjust mayonnaise to reach desired
consistency. Spoon yolk mixture into a pastry bag fitted with a large star tip. Pipe
a rosette of yolk mixture into each white half. Garnish with a slice of pimiento stuffed
olive or sprinkle with dill. Store in refrigerator until ready to serve.

Mini Bites, Big Flavor

One of the Top 20 Catering Trends for 2015 is emerging, and it’s not the traditional beef carving station (surprise, surprise).  According to Social Tables,  a nationally recognized resource on event planning, serving miniature portions of dishes at events is hot this year.  At Hamby, we love creating the perfect bites, and have shaped our menus to offer unique options in line with this trend.

As cocktail hours continue to get stretched to longer, more extravagant affairs so that newlyweds can get photos in the “magic hour” of light, or social events become “standing room only” – our clients have started ordering more passed hors d’oeuvres for their events. We think we can credit this movement to a couple of different reasons.

First of all, people like options. It’s fun to have a stacked menu with different flavors and pairings to satisfy all tastes, and it give guests an opportunity to try something unexpected. We recommend providing variety by offering a fish or shrimp bite, a hearty meat option and a vegetarian treat.  Our Watermelon Cube with fresh mozzarella, house-made basil oil and balsamic salt is a new crowd favorite!

Guests also like to chat while they eat, so it’s best to have food that can be consumed in a single bite (or maybe two). Some events aim to have a more relaxed atmosphere and are not suited for a sit down meal, so mini bites are the perfect solution to feed your guests while keeping the party going.  It doesn’t mean they have to leave hungry.  Our braised short ribs atop crispy polenta cake, or fried chicken bite on a maple syrup waffle, are sure to appease appetites.

Combining a wide variety of ingredients into one perfect bite is not an easy task, but our chefs are up for the challenge. Chef Brunksi and his team, including sous chefs Maybell Williams and Fred Herring, work diligently to make each bite unique and precise.  From the preparation to the plating, we take a lot of pride in the display of each miniature portion.

As we spring into April, we’re excited to highlight our Spring/Summer Hors D’oeuvres menu that includes items like Carolina Sushi, Chicken Ceasar Bibb Lettuce Cups and Mini Tomato Pie.

Once a week, text messages erupt our phones with the regular call to brunch. The frantic group text is typically followed by a scramble to figure out where we’re going, how many people are coming, what time we’re eating, and whether or not mimosas will be available.
