When we were invited to cater an exclusive dinner at the home of Elizabeth Stuart, we couldn’t wait to start concepting the menu! Elizabeth (better known by her friends as Muffie) is the genius behind Elizabeth Stuart Design and one of Charleston’s most well-known creatives. Her eye for detail and design are unparalleled and she has a passion for showcasing the finer things in life – like luxury towels from Weezie Towels! To celebrate the brand’s newest line of beach towels, Muffie hosted an exclusive dinner for her stylish friends at her home in Old Village.

For this poolside event, our culinary team crafted a four-course menu featuring light and fresh flavors. We created dishes that were bright and eye-catching, pulling inspiration from the season and incorporating ingredients in every shade of summer. Each course was a beautiful blend of vibrant colors to complement the outdoor setting and decor.

The evening began with a cocktail hour by the pool. As the guests arrived, we popped bottles of bubbly and passed around a few of our favorite tropical-themed hors d’oeuvres. Our Petite Crab Cakes with Caribbean Salsa & Garnish, Carolina Pulled Pork Stacks with Hawaiian Slaw and Roasted Corn & Pimento Guacamole Tostadas with Pickled Sweet Peppers & Micro Cilantro were the perfect small bites for the ladies to enjoy while they mingled.

We pre-set the dinner table with a colorful Tartine Trio, adding a nice contrast of red against the blue Weezie Beach Towels, which Muffie brilliantly repurposed as tablecloths! Each slice of our Artisan Bread featured a different topping combination: Brie, Sliced Figs, Crumbled Bacon & Honey; Whipped Goat Cheese, Fresh Peaches, Strawberries & Basil; and Red Pepper Jam, Crispy Prosciutto & Microgreens. The plated tartines were followed by an array of side dishes, served family style to give the ladies a chance to connect and catch up before sharing a meal:

  • Heirloom Tomato & Herb Salad with Fried Chickpeas & Capers
  • Grilled Hearts of Romaine Salad with Charred Corn, Farmers Cheese, Avocado, & Green Goddess
  • Wild Rice with Grapefruit & Orange Segments, Fennel, Avocado, Micro Cilantro, & Citrus Vinaigrette.

Once everyone filled their plates with the appetizers, Executive Sous Chef Chris Rausch made an appearance to greet the guests and present the main course. The entrées were served table-side and we brought the tropical theme full circle with Local Shrimp Skewers with Tropical Mango Salsa and Sliced Jerk Style Chicken Breast topped with Avocado Cream.

We wrapped up the evening with a sweet treat for the ladies, our Rhubarb & Strawberry Creme Brulee topped with Fresh Mint.

The weather was perfect, the decor was stunning, the company was lively and the food was delicious! We had so much fun being part of the celebration and were inspired by all of the stylish and creative minds in attendance. We would have never thought to use a beach towel for a tablescape, but we’re definitely stealing that idea for our next pool party!
